Most microbial enzymes are produced by aerobic deep fermentation, which provides better control of growth factors than solid-state methods. The recovery and purification techniques discussed are typical techniques for fermenting enzymes, although they are generally applicable to most extraction and refining operations, regardless of whether the source of the enzyme is a plant, animal or microbial source. In particular, it involves the following processes: cell disruption, precipitation and solid-liquid separation, including concentration by ultrafiltration.
