During the 2017-2018 academic year, the Sweetwater Union High School District expanded the number of menu options served in cafeterias by including more inclusive items that meet the dietary needs of vegan and vegetarian students.
Using locally-sourced ingredients, school gardens and clean-label foods, SUHSD’s Nutrition Services have created delicious new menu items that appeal to all palates and meet federal nutritional regulations. The district’s goal is to establish a welcoming and inclusive cafeteria environment and offers food that everyone, even the teachers and the meat-eaters, want to eat.
To accomplish this goal, school kitchen managers will be participating in free culinary training programs that help them adopt more plant-based foods, expand their culinary skills, and encourage them to test new flavor profiles from around the world.
The Sweetwater District is also piloting a program that combines strategies from marketing, psychology and economics to promote positive lunch spaces that make choosing healthy foods easier for students. The Smarter Lunchrooms Movement has been implemented at Montgomery High School and Eastlake High School, and it expected to reduced food waste and increased student satisfaction.
