Seafood Curry Asian-Style:


4 ounces shrimps, shelled and deveined
4 ounces scallops
6 ounces cod fillet, cubed
1 tablespoon olive oil
1 medium red onion, chopped
2 cloves garlic, minced
2/3 cup fresh coconut milk
2 tablespoons red curry paste
2 medium carrots, cubed
1 tablespoon fresh coriander, chopped
salt and freshly ground black pepper


Heat oil in a large saucepan over medium-high heat. Stir-fry onion and garlic until fragrant.
Add coconut milk, carrots and curry paste. Cook for 5-7 minutes, stirring frequently.
Add in shrimps, scallops, cod and coriander. Cover with lid and cook further 5-7 minutes, stirring occasionally.
Transfer into a serving dish.
Serve and enjoy.
Yield: 4 servings

Coleslaw with Apple and Walnuts:


2 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon raw honey
1 tablespoon Dijon mustard
1 small head cabbage, finely shredded
1 carrot, peeled and julienned or thinly sliced
2 medium green apple, cored, thinly sliced
1 medium white onion, finely chopped
1/4 cup celery, chopped
1/4 cup walnuts, coarsely chopped


Whisk together the olive oil, apple cider vinegar, raw honey, and Dijon mustard in a large mixing bowl.
Add in cabbage, apple, and celery. Toss to coat well with dressing.
Divide into 4 plates. Sprinkle with chopped walnuts.
Serve and enjoy.
Yield: 4 servings

Almond Coconut Waffles with Banana


2 cups almond flour
2 tablespoons coconut flour
4 medium eggs
3/4 cup applesauce, unsweetened
1/2 cup water
1 tablespoon coconut oil, divided and melted
4 banana, cut into small pieces
1 teaspoon cinnamon, ground
cooking spray


Lightly grease waffle maker with cooking spray. Preheat to medium-high.
In a medium bowl, combine almond flour, coconut flour, eggs, applesauce, water, 1 tablespoon coconut oil, and cinnamon. Mix well with a wooden spoon.
Fold in the banana slices.
Pour 1/4 cup of batter into the waffle maker, and spread the mixture evenly. Cover and cook for 1-2 minutes or until golden brown. Repeat procedure with the remaining batter.
Place waffles in individual serving plates. Drizzle with honey, if desired.
Serve and enjoy.
Yield: 6 servings
